Every day, freshly caught lobster from Panama’s San Blas Islands is sold by the Kuna Indians at Panama City’s central fish market. This dish is called Langosta al Ajillo (Garlic Lobster), created at Basque Restaurant which is located inside the fish market building. After you order, the chef just walks outside and buys what she needs to make your food. The only way it gets fresher than this is if you pulled the lobster out of the ocean yourself!
