These Southwest-inspired burgers pack a wallop of flavors: chili, red onion, and cilantro. But the real kicker is the chipotles, or smoked jalapeños. Leave them out if you don’t want the heat. The onion is
meltingly tender and takes on the flavor of the barbecue sauce. Try a mesquite-flavored sauce for a smoky flavor.
MAKES 4 BURGERS
Ingredients
1¼ pounds ground turkey
1 tablespoon chili powder
1 teaspoon ground cumin
1 small red onion, chopped
¼ cup chopped fresh cilantro leaves
¼ cup minced canned chipotle chile peppers in adobo sauce
1 cup grated cheddar cheese, for topping
Directions
1. In a large mixing bowl, gently combine all the ingredients except the cheese, using your hands. Form into 4 patties, each ¾ inch thick.
2. Lightly oil the grill or a skillet over medium-high heat and cook the burgers to the desired degree of doneness, at least medium, 4 to 6 minutes per side.
SERVE IT UP wrapped like a burrito in warm flour tortillas

Caramelized Onions
MAKES ABOUT 2 CUPS
Ingredients
2 tablespoons olive oil
2 large onions, very thinly sliced
¼ teaspoon salt
¼ teaspoon coarsely ground black pepper
¼ cup beef broth
½ cup barbecue sauce
2 tablespoons balsamic vinegar
Directions
1. Heat the olive oil in a large skillet over medium-high heat. Add the onions, salt, and pepper and cook, stirring often, until the onions are browned, 7 to 10 minutes.
2. Add the broth, barbecue sauce, and vinegar. Reduce the heat to low and simmer until the sauce thickens, about 15 minutes
